Recipe: My Simple Pineapple Balsamic Glazed Salmon
We're into a week and a half of January 2018! I hope you all are sticking to your goals. I get asked a lot about what I eat and the types of meals I make. In today's blog I share my simple recipe for pineapple balsamic glazed salmon! (Which is influenced by my trip to Hawaii last year, and all the pineapple and fish I ate there!)
Ingredients:
Salmon
Fresh Pineapple (I buy the pre cut pineapple slices since it has the juices in the container to pour onto the salmon)
Balsamic Glaze
Mushrooms
Spinach
Olive Oil (to saute the spinach and mushrooms in)
How to Prepare the meal:
1. Take the salmon and rinse it under cold water place the skin side down on a foil covered baking sheet.
2. Take the juice from the pre-cut pineapple and pour enough over the salmon to give it a nice coating.
3. I bake my salmon at 375 degrees for about 40-45mins (remember times and temperature vary depending on the size of your salmon piece)
4. Drizzle a small amount of olive oil into a pan and saute spinach and mushrooms as side dishes (You can make any side dish you want with the salmon, but this is what I made with mine)
5. Once the salmon is fully cooked go ahead and cut a piece of salmon (take the skin off the bottom before plating) and lightly drizzle balsamic glaze over the top of the piece of salmon you cut. (see picture below)
6. Add sliced pineapple on top of your piece of salmon for a nice presentation
