Recipe: 5 Easy Steps to Make Coconut Chia Seed Pudding

Running low on time? Always busy and on the go? Craving something sweet? Today I tell you how I make an easy coconut chia seed pudding! First off chia seeds are beneficial for our health because these tiny seeds contain protein, omega 3s, fiber, and antioxidants. Let's get started on the recipe:

Ingredients:

-Chia Seeds (I bought organic black chia seeds)

-Almond Milk (I used almond milk because it's a good source of calcium, lower in calories, etc, but you can use any type of milk you'd like)

-Coconut Milk (I bought this in a can and stuck it in the refrigerator to make sure it's cold)

-Toasted Coconut Flakes (I had previously toasted some coconut flakes in the oven, so I threw some on top. However, if you don't have any toasted coconut flakes it's optional or sprinkle regular coconut flakes on top!)

-Vegan Semisweet Mini Chocolate Chips (You can buy 70% Dark Chocolate Chips too, or add the type of chocolate you like. I bought the Vegan chocolate chips because there are no extra additives just cacao and cane sugar)

-Blueberries (You can add any fruit of your choice, but I used blueberries because they are easy to throw in the pudding and pair well with chocolate.)

The Recipe:

Step 1- Measure out 4 tbsp of chia seeds into a bowl

Step 2- Pour a splash of the cold coconut milk and mix. The chia seeds will start to get thick as you mix.

Step 3- Pour 1/3 cup of almond milk to thin it out and continue to keep mixing. The chia seeds should start to become thick into a pudding consistency. Mix until it is the consistency of your liking. TIP: If the consistency of the pudding is to watery then simply add another tbsp of chia seeds, if the chia seed pudding is too thick then either add a small amount of water or almond milk to thin it out a bit.)

Step 4- Refrigerate for 5-10 mins or leave it overnight to have an on the go snack the next day. The chia seeds should absorb the liquids and look like the picture below.

Step 5- Top the bowl off with some fresh blueberries, toasted coconut, and sprinkle some mini chocolate chips.

Eat and ENJOY!!! Tip: When I make the chia seed pudding I usually only eat half of the bowl because the chia seeds I bought a serving is 2 tbsp, so I have leftover chia seed pudding the next day!
