Blueberry Banana Breakfast Bars Recipe

Another recipe coming in hot and fresh from the oven! Today I share my simple recipe that requires only a few ingredients and a short amount of time. Blueberry banana breakfast bars (what an alliteration lol) are great since there are no added sugars and are truly all natural from the fruit in the bars. These bars pack potassium, antioxidants, fiber, and more. Let's get started on the recipe.

Ingredients:

- Bananas (It is better to have ripe bananas since the natural sugars come out more when it's ripe. I also used two large organic bananas)

- Blueberries (I bought the fresh organic blueberries and froze a 1/3 cup)

- Oat Bran (The oat bran creates more smoothness in the bar

- Plain Almond Slices (This is to add some crunch to the bars)

- Optional: Raw Honey to sweeten if banana isn't ripe (I used one teaspoon)

Cooking Spray for the baking sheet

THE RECIPE:

Step 1: Get a bowl, peel and mash the banana with a fork till it looks like baby food (This is similar to my 4 ingredient cookie recipe)

Step 2: Add 1/4 cup of oat bran to the banana mash and mix.

Step 3: Add a handful of almond slices for a crunch texture and mix

Step 4: Add 1/3 cup of FROZEN blueberries (It is important that the blueberries are frozen, so that they do not fall apart when you mix it.

Step 5: Optional add a teaspoon of honey if the banana isn't ripe and mix.

Step 6: Preheat oven to 325 degrees Fahrenheit and bake for 12-15mins. (I baked mine for 12 minutes)

Step 7: Get a baking sheet and spray it with cooking spray

Step 8: Scoop the mixture onto the baking tray. Next, form a rectangular flat shape on the baking tray, and gently take a butter knife and cut it into separate squares, you may have to scoot the squares apart from each other. I was able to make six medium sized squares.

Step 9: Bake in the oven for about 12-15 minutes

Step 10: Let the breakfast bars cool for 5-10mins
